The Konjac plant (Amorphophallus konjac) grows in slopes 2000 to 4000 ft above sea level. While the konjac root looks similar to other root vegetables, it belongs to a different family. Unlike potatoes and yams which are heavy in starches, konjac has high fibre content and very little starch.
