Pediococcus acidilactici are Gram-positive bacteria of the genus Pediococcus, with spherical cells that are often arranged in pairs or in chains of four. They form white colonies on MRS medium, are facultatively anaerobic, and are catalase negative.
The strain JY07 was isolated from Japanese soy sauce fermentation, has salt tolerance characteristics, maintains a viable count of 10^5-10^6 CFU/mL after 10 days, with a glucosidase activity of 266 U/mL and a lactic acid production of 268.50±13.92 mg/100mL.
Efficacy: Pediococcus acidilactici can produce short-chain fatty acids such as acetic acid and lactic acid, which can inhibit the growth of intestinal putrefactive bacteria and the formation of toxic metabolites, and protect intestinal health. In addition, it can change nerve function through the vagus nerve, relieve stress, and improve anxiety.
